A história do café
This blend was created using cherries from multiple smallholders that deliver to Capucas, all located on the fringes of the Celaque National Park in the Copán region.
Each blend is made of cherries picked and delivered to the co-operative on the same day. The cherries are mixed according to criteria such as altitude and certifications. The cherries are processed at Capucas mill. After being separated, the cherries ferment on a pile overnight and are taken to a large polytunnel called "Secadora Solar" to dry for up to 30 days.
Farm size ranges from 2.5 to 50 manzanas (1.75 to 35 hectares) and is usually divided into 2 or more parcelas or plots which are not always linked. Price of land is high (around USD 16.000 per manzana, some say), forcing farmers to grow their plots by buying parcelas in different places.

O processamento
This coffee was harvested at its optimum point of ripeness in the plots of our producers which have different seals of certification that support the quality that they produce, after being collected the producers take their coffee in cherry to the facilities of the cooperative where it is processed the same day of cutting to maintain the quality and good care of the same, just after receiving this coffee a process of cleaning of impurities and also separation of incorrect grain for the process (very mature grain, this coffee is then taken to a solar dryer and the complete process of slow drying is carried out, this can take more than 30 days extending up to 35 days since the pulp as well as the mucilage must be dried before reaching the bean, this is also stored in grainpro bags so that it is in perfect conditions to be consumed. This coffee is prepared with part of the production of Santos Sanabria, Rudy Franco, Felicita Paz who have their plots at an altitude of 1400 to 1650 meters above sea level.Mais ofertas deste vendedor
