A história do café

The Colombia Department (State) of Risaralda is central to the great coffee growing areas of the country. It is surrounded by Tolima to the east, Cauca to the west, Quindio to the south and Caldas to the North. 

The principal city of the Risaralda is Pereira. We visited there about a decade ago and can attest to top coffee produced in the mountains all around the capital. Risaralda is part of the 'coffee triangle' of Colombia, where the most noted coffees are grown and the highest concentration of coffee farms. The area, in general, sits roughly 5 degrees north latitude, very close to the equator, so hours of daylight and darkness are close to even year round.

Farm elevations are generally 5200 to 6000 feet. Ripe cherries are hand picked, mostly by women from the region, then wet processed using traditional fermentation, washing with pure mountain water using a series of canals, and sun-drying on patios. Supremo beans are large and uniform with 90% of them over screen 18. This lot is comprised of Supremo beans merged from area smallholders resulting in a mix that can be used for single origin, blend components or to add brightness blends and dark roasts. These are dense, durable and large beans.

O processamento

the traditional method here is washed processing. This involves removing the skin and mucilage from the cherries before drying, leaving just the parchment and silverskin intact. The fruit is typically broken down by controlled fermentation and then removed using water, hence the term “washed”.
