A história do café

This blend come from several smallholders in the municipalities of La Plata, La Argentina, Nataga and Paicol in the southwest of the department of Huila. The average farm size ranges between 1 and 3 hectares. All farmers grow their coffee under the determinations of the Rainforest Alliance certification. They are committed to the environment and avoid environmental pollution, protect the ecosystem and water sources and do not use agrochemicals. They also guarantee a fair payment to their workers.

O processamento

The cherries are harvested manually by the producers and undergo a fermentation stage that lasts between 18 and 30 hours with the coffee still in its own mucilage at the producers' farms. Then the beans are washed between 2 and 3 times and transferred to the marquesinas on the farms, where the coffee is sun-dried for 12 to 20 days until the dried parchment coffee is obtained ready to be delivered to the Global Coffee Cooperative.
