La historia del café

Finca Santa Rosa belongs to the Pacas Family and it is located in the Santa Ana region right next to the Santa Ana volcano. The farm has been in the family for five generations and it is one of their flagships. Maria Pacas describes this coffee as one of those which are chocolatey from beginning to end, making it a great option for espresso or a filter you can have frequently without getting tired of it. It is also a safe bet for at-home consumers, allowing them to brew a great cup even if they are not experienced in coffee making. 

All coffees from Santa Rosa are shade-grown and the farm managers manage the canopy in a way to allow more direct sunlight in winter and less over the summer. This ensures the plants, recently renovated, yield well without damaging them. The trees receive optimum levels of fertilizers and are pruned regularly. The volcanic soil is rich in nutrients, helping the cherries develop a high level of sugars that produce great coffees.


El proceso

When the coffee cherries arrive at the mill, they are pulped and fermented for 12 hours. When all the mucilage is released, they are washed and soaked. Parchment is patio dried.
