"The extended fermentation gives this coffee a deep caramel sweetness and a bright clean citric acidity, making it a perfect daily coffee to be enjoyed as espresso or filter. This coffee was carefully processed by Ernesto Perez who is Q-processing certified." - Ensambles de Cafes Mexicanos, S.A. DE C.V.

La historia del café
The state of Veracruz is the first region of Mexico to have seen coffee back in the 18th century. Coffee has always thrived in this region, where soils and climate are very favourable to coffee cultivation.
This coffee is produced by Alejandro Martinez, a 4th generation cofffee grower in Coatepec, Veracuz.
It is shade grown, weeding is chemical-free.
Coffee varietals initially planted in Coatepec were typica and bourbon. Nowadays, Alejandro is exploring alternative varietals that adapt to new climate conditions. This lot is a blend of marsellesa, caturra, obata y anacafe 14.
The coffee is processed at Ernesto Perez´ mill, who is a Q processor certified producer living nearby.
