One of 6 kids, Iris was never encouraged to be a farmer. For her father, coffee was not a woman's job. She was, however, encouraged to study and graduated as an industrial engineer in the local university of Santa Rosa. She started working with sustainability projects in Capucas soon after, at age 25.

Coffee has always been Iris passion. "As a child, I used to cry for it! I loved how every coffee tasted differently," she recalls. When she inherited 12 manzanas of the original 100 manzanas owned by her dad (less than what her brothers were given), she began her journey as a grower.

With a smaller plot to cultivate, Iris has been quality-driven from the beginning, something rather unorthodox for women in Honduras. She used to dedicate her spare time at Capucas to cupping, which led her to an opportunity to study sensory science at Ihcafé and later to become certified as a Q-Grader. Now she is the head of quality control for the co-operative and trains other workers and farmers.

Iris is also one of the founding members of Flor del Campo, a group of female growers that got together to roast and sell their coffee to the internal market. Iris supports the group with training sessions in cupping and quality control.   "
