The coffee story

The large membership of this regional lot speaks to the region’s promise. In line with our curriculum, producers are in the process of updating their processing methods—as always, with the intent of improving quality. Two women, Elita Carranza and Reyna Garcia are setting high standards by harvesting high-quality coffees. Reyna, who is educated as an accountant, has instructed the community on fiscal sustainability, teaching farmers how to use their backgrounds and skills to elevate themselves and their communities. In order to combat an overabundance of Catimor, we provided the group with Bourbon seeds to elevate quality. We will be able to taste the quality next year. 

The process

Processing Methods: The farmers in this comité usually bulk their processing, starting picking and depulping early in the morning. On the same day, the cherry is fermented for 12-48 hours. Drying Methods: A few farmers here dry their coffee in propylene tents. Some use solar driers.
