La Victorina is a Costa Rican company dedicated to the processing and export of specialty coffee from the Dota region. It works directly with small local producers seeking to improve the quality and profitability of their coffee, processing it under specialty standards and connecting it to the international market.
The company manages the entire process: it receives coffee in cherry, performs controlled fermentations and precise drying, carries out selection and microlot preparation, and exports the coffee with full traceability, sensory analysis, and cup consistency. This model allows producers to access higher-value markets without investing in processing infrastructure.
La Victorina exists because it believes specialty coffee is a pathway to improve the livelihoods of producing families and to offer roasters coffees with real identity, transparency, and consistency—connecting the producer’s effort with the roaster’s pursuit of quality.
Villa Sarchí Anaerobic Natural – Dota, Costa Rica
This coffee comes from the Dota region in the Los Santos mountain range, one of Costa Rica’s highest and most renowned coffee-growing areas. Cool high-elevation conditions and deep soils of ancient volcanic origin favor the development of high-density beans and complex flavor profiles. The Villa Sarchí variety, a natural Bourbon mutation, expresses in this terroir an elegant, sweet, and structured cup.
Fully ripe cherries underwent an anaerobic natural process, fermented in a sealed, oxygen-free environment to intensify aromatic expression and fruit complexity. The coffee was then slowly dried on raised African beds, allowing a gradual and uniform stabilization of sugars and aromatic compounds.
In the cup, it presents a vibrant and layered profile with notes of ripe red fruits, plum, and tropical fruit, supported by subtle wine-like nuances and panela-like sweetness. Acidity is bright and juicy, the body silky, and the finish long and clean—reflecting both the precision of the process and the distinctive character of Dota.
