cacaaacoaococaOmbligón is a rare natural mutation discovered in south Huila, easily recognized by its small, rounded seed — hence its name, “ombligón” (belly-button). Known for its sweetness and structure, this variety thrives in Wilmer Cuéllar’s farm, where the high elevation and balanced sunlight create ideal conditions for slow ripening.
In this Natural process, cherries are carefully selected and sun-dried on parabolic beds under constant rotation to ensure even drying and clean fruit expression.
The result is an intensely sweet and juicy cup, with notes of ripe red fruits, strawberry jam, and cocoa nibs, complemented by hints of tropical fruit and panela. The texture is round and syrupy, with a long, winey finish that makes it stand out on the table.
After gaining international attention for its role in the 2023 World Barista Championship, where it contributed to the third-place finish, Ombligón has become one of Colombia’s most exciting new varieties.
If you’re a roaster looking for something truly different — a coffee with story, rarity, and exceptional cup character — this is the one to explore.
