The coffee story

Created in 2016, Coopagro is a new yet promising co-operative. One year after their foundation the co-op was the national winner of Peru’s Cup of Excellence. The following year, they placed third. Innovative, Coopagro’s team has recently visited Costa Rica to learn about agroforestry systems in coffee farms and shade management. They are also starting to produce honey process lots due to the smaller use and contamination of water. Able to produce around 55 containers per season, their regional blends are grown at up to 1700 m.

“We are promoting the honey process as an eco-friendly method. As it requires more time and investment and we are not sure when coffee shops will reopen, we will focus on what we do best this year, the washed lots. There will be some volume of naturals and honeys too because some growers want to take the chance but we want to feel the market.”

The process

1. CLASIFICACION: Se escoge los frutos mas rojos de las plantas para su cosecha 2. DESPULPADO: Remover la pulpa o la piel de la cereza. Para hacerlo, se puede emplear una máquina llamada despulpadora 3. FERMENTACION: El café se fermenta en tanques durante 18 a 24 horas según la temperatura y el valor que se dé al café 4. SECADO: El secado es una operación de alto riesgo, donde tenemos un producto muy vulnerable al deterioro por microorganismos
