The process
Each of us picks their own coffees from their individual finca. We then blend these beans together and depulp together as well, after which the beans are washed in our wet mill. We have a patio and on which we dry some of our beans and Cafesmo has also donated a few solar dryers, which we use for our micro-lots. However, for this El Pinal Premium blend, we will typically bring the beans to Cafesmo, to be dried on the much bigger patio there. In Cafesmo, the bags will also be weighed, the Q-Grader will do a physical and sensorial quality control, and once the beans have been dried to 11% humidity, prepared, and approved, they will be stored until they are sold for export purposes. All our fincas and all our coffees are Fair Trade as well as Organic certified.

A rich and authentic taste of our terroir. This coffee is cultivated at some of our highest fincas, all located above 1,500 meters and in natural pine forest that offers abundant nutrients and generous shade. The varietals we use for this blend are: pacas, lempira, ih-café-90, bourbon and parainema. We also cultivate avocado's, bananas and citric fruits on these same finca's, hints of which can be found back in the cupping profile.

Sensorial radar

We, the 250+ members who together form Cafesmo, have formalized our cooperation in 2016. Our individual fincas are relatively small, most of them ranging from 2 to 12 hectares. All our fincas are FTO certified and we offer an array of specialty profiles. Our region - Ocotepeque - is known for its rich soil and perfect altitude range to grow unique, richly flavored coffees. We are convinced that Mercedes and Ocotepeque will continue to gain in fame over the next few years, and deservedly so. Most of our finca’s are located between 1,200 and 1,600 meters. Thanks to a varied topography, we have a long harvest season, that starts late October and lasts until March. Varieties include Pacas, Lempira, Parainema, Catuaí, Obatá, Colombia, IHCAFE90… We have young people as well as less young members, women and men, someone who is a microbiologist, and one who has been an elementary school teacher. We’re a group of highly motivated coffee growers with decades of experience. Most of us are second generation farmers, some third generation. Our elders teach the youths how to cultivate coffee. Most of us are men, but our wives and extended families help us when we are in the midst of harvest. The strongest guys carry the coffee on their back for about twenty minutes over winding paths to the dirt road. If we can afford it, we hire mules for a day or two, but usually we don’t have the resources for that. Together, we offer several varietals, which we often blend for enhanced flavor patterns and rich profiles. When we prepare micro-lots, we usually do so with a single varietal, although we sometimes use two, just for the fun of it. You should try some of our coffees. We’re certain that you won’t be disappointed. The altitude, the pure air, the cleanliness of the water and environment, and, of course, our own efforts, all add up to produce one of the best coffees of our region!

Shipping
Once the ordering period ends we will consolidate all coffees in a shared container. During transport, your coffee is fully insured. We will keep you informed about the shipment status.
Upon arrival of the coffee at the warehouse, you can choose between 2 delivery modes:
- Doorstep delivery: We will take care of transport to your roastery. We will provide your coffee fully insured until it is ready for unloading from the truck at your roastery.
- EXW (ex. warehouse) means that we will provide the coffee ready for pick-up at the terminal of the warehouse. You are responsible for organising transport and insurance from the warehouse to your roastery.
Currently, we can deliver coffee anywhere in Europe, except Hungary. For all European buyers, the coffee will be provided custom cleared in any case. Roasters in Switzerland choosing EXW will be responsible for customs clearance.
