Bourbon Sidra currently represents just 1% of our total production. Because of its rarity, we cultivate and process these trees with obsessive attention to detail, treating this lot as the true crown jewel of our farm.
The Perfect Balance (Aerobic Process): We know that Sidra implies a complex and delicate genetics. For this lot, we opted for a strategic aerobic fermentation. Unlike more aggressive processing methods, this fermentation in the presence of oxygen allows us to achieve a perfect balance between sweetness and acidity.
