Story of the Coffee: This is our flagship coffee, the true beating heart of Hacienda Venecia.
The Castillo variety and its lineages make up 85% of our crops, but this lot is far from ordinary. It is the product of over 60 years of family tradition, experimentation, and agronomic selection. For six decades, we have refined our farming practices to achieve the perfect balance between sustainable yields and exceptional cup quality.
Consistency Over Time: We know that for a roaster, consistency is everything. Thanks to our deep understanding of this variety and our unique terroir, we offer a distinctive product that maintains its profile harvest after harvest. This is the coffee you can rely on for your core lineup.
The Process (Aerobic Natural): We elevate the classic Colombian profile through a meticulous process. We perform a controlled aerobic fermentation (with oxygen) to ensure cup cleanliness. Afterward, the coffee is sun-dried with the pulp still intact (Natural process). This technique allows the bean to absorb sugars from the mucilage, resulting in a cup with fuller body, caramel-like sweetness, and fruit notes that a traditional washed coffee simply cannot match."
