More than just a coffee, Gayo is a story brewed from the cool highlands of Aceh, Sumatra. At its heart is the traditional wet-hulled process—a unique post-harvest method developed by local farmers to adapt to Indonesia’s humid climate.

📍 It starts with hand-picked ripe cherries, which are pulped and fermented briefly before being hulled while still wet—at around 40–50% moisture content.
🌞 The beans are then sun-dried on patios or drying beds until they reach 12–13% moisture, ready for export.
💪 This process gives Gayo coffee its signature profile: heavy body, low acidity, and deep earthy, spicy notes.
