The coffee story

 Do you know the Papayo variety? It was named after the similarity of its cherries to a papaya. Just like Pink Bourbon, it was discovered in the south of Huila not long ago. Papayo stands out for its exceptional sweetness and complexity, which set it apart from other varieties. 
 Wilmer Cuellar grows Papayo on his farm Las Brisas, and through experimentation, discovered that processing it as a natural fermented further enhances its complexity and fruitiness. This method imparts real fruit salad notes to the coffee, with hints of raspberry in its aroma, along with notes of kiwi, tropical fruits, berries and passion fruit. It has a juicy body and a long-lasting exotic aftertaste.
