"Lots of dried fruit and plum in the nose. Smooth and sweet, with lingering, toffee-like aftertaste, complex and well balanced. The body is medium and silky, acidity is citric of medium intensity." - Los Cipreses Farm

Monte Verde is one of my family's farms and it is managed by my mom Hilda and my father Renee Contreras.  The farm has been in my family since the days of my great-grandfather, a Guatemalan sugar cane producer who came to El Salvador in the late 1800s to marry my great-grandmother, a coffee producer.  We process all the coffees from our farms in wet mill inside Monverde farm focusing on micro-lots.  As a company, we invest in social projects and education at El Paste school. We organize free medical care days to provide appointments to the workers and supply them monthly bags with basic food items.

The process

Ripe cherrys are manual pick and sort for processing, coffee is depulp and keep in fermentation tank for 36 hours and later wash, after 15 days coffee drying in raise bed is measured and store with 11% humidity.
