The coffee story
Finca Santa Maria belongs to the Pacas Family and it is located in the Santa Ana region, in the North-west of El Salvador, right next to the Santa Ana volcano.
All coffees from Santa Maria are shade-grown and hand-picked. The farm supervisors manage the canopy in a way to allow more direct sunlight in winter and less over the summer. This ensures the plants, recently renovated, yield well without damaging them. The trees receive optimum levels of fertilizers and are pruned regularly. The volcanic soil is rich in nutrients, helping the cherries develop a high level of sugars that produce great coffees.
