The coffee story

Coatepec is where coffee was first introduced in Mexico. Finca Fatima is a farm that has kept the original varietals and shade-grown coffee practices. It is one of the lungs of Veracruz, providing space for many birds and wildlife to thrive and migrate. The coffees now benefit from the skills of their owner in post-harvest management, with controlled fermentation through Brix and PH measurement to achieve quality and repeatability.
