Process: Fully washed. The cherries are hand-sorted and depulped in the late hours of the afternoon. The beans, covered in mucilage, are soaked in water tanks for around 48 hours, rinsed and dried on raised beds for up to 15 days.
Addis Ketema is one of the less well-known co-operatives of the Yirgacheffee coffee-growing region. It is located in Wenago (or Wonago), one of the most densely populated woredas in Gedeo, with roughly 1.500 people per square kilometre. The area has been cultivated for over 100 years with farmers being passed from father to sons. As families grow the plots become increasingly smaller, adding pressure to the local economy and leading to migrations.
