The process
The washed processing of Ethiopian is relatively standardized / follows similar patterns. First cherries are pre-sorted, which means under and overripe ones, as well as foreign material, are being moved for a more homogenous cherry quality. Then the cherries are depulped mechanically and then enter a fermentation tank. The remaining mucilage which surrounds the parchments breaks down with the help of naturally occurring yeasts and bacterias within 40 - 50 hours. Afterward, the coffee is washed a second time in a slim water funnel which simultaneously separates low from high-density beans by gravity. Then the clean, wet parchment coffee is put on drying beds under shade, where further sorting by hand happens. As the parchment is still wet at this point, it is much easier to detect irregular or insect-damaged beans. After 24 hours the coffee is moved to the another raised drying bed under the sun to be dried to a moisture content of 12% within 7-10 days.

Sensorial radar

Sediloya is a young cooperative in the Gera area of Jimma with more than 500 members. All of them harvest ripe cherries from the native coffee trees and deliver them to the central washing station of Sediloya were the coffee is processed. Since its foundation in 2015, the Cooperative has improved the quality of their product drastically - to a large extent by the help of the Value Chain Project initiated by Berlin-based roaster Coffee Circle.

Shipping
Once the ordering period ends we will consolidate all coffees in a shared container. During transport, your coffee is fully insured. We will keep you informed about the shipment status.
Upon arrival of the coffee at the warehouse, you can choose between 2 delivery modes:
- Doorstep delivery: We will take care of transport to your roastery. We will provide your coffee fully insured until it is ready for unloading from the truck at your roastery.
- EXW (ex. warehouse) means that we will provide the coffee ready for pick-up at the terminal of the warehouse. You are responsible for organising transport and insurance from the warehouse to your roastery.
Currently, we can deliver coffee anywhere in Europe, except Hungary. For all European buyers, the coffee will be provided custom cleared in any case. Roasters in Switzerland choosing EXW will be responsible for customs clearance.
