The coffee story

Torra and Tatama are Cafenorte’s regional blends. They are extremely reliable blends that score consistently from offer sample to PSS and at the roastery. We love working with these blends because they have great quality and there are no surprises. Tatama is fuller in body and fruitier and Torra is more elegant and citrussy. Over the years, we have seen them being used both for espresso and filter.

The blend combines coffees from the whole Norte del Valle


How Cafenorte works with farmers
On top of the local plaza price, the cooperative pays an extra 5.000 COP (Colombian pesos) or around USD 0.11/lb after the sale of the coffee. There are two second payments that can vary from USD 0.04/lb to USD 0.11/lb in total. How much farmers will be paid depends on what the administrative council, a group of producers elected to represent the member communities, decides. 

The council might choose to use part of the premium for development projects that will benefit the members long-term. One of such projects in the past was the improvement of the quality control lab which is highly important for farmers as the cooperative provides quality analysis for free. Normally, farmers would have to pay USD 52 to get an assessment of their beans.

The process

Washed in the traditional way with 18 hours of natural fermentation before depulping.
