The coffee story

Luz Helena, the mother of Felipe and Carlos Arcila (the brothers who run Cofinet to export the family's coffees) has always been an incredible advocate for coffee from an early age. She grew up in Armenia, Quindio, which is part of the coffee triangle in Colombia. (The coffee triangle use to be the highest producing coffee of Colombia 20 years ago).  This lot comes from  Finca Maracay, an 8 hectares farm in Armenia.

Luz Helena has not only managed her own coffee farm, but she has also managed other farms that produce other commodities such as avocado and oranges.  

The process

This coffee was exposed to a dry anaerobic fermentation of 30 hours. Later placed on raised beds until 20% moisture content is achieved, afterwards coffee is placed inside grain pro bags again for 80 hours (at this stage fermentation is driven by natural yeast) and later left to dry on raised beds to 10.5% moisture content.
