The coffee story

Carlos is a third generation coffee farmer who inherited two farms when her father Hernando Arcila passed away 20 years ago. For many years his focus was on producing high yields but since 2020 he enrolled in our single state program in search of producing high quality coffee in volumes. After one year of hard work Carlos is ready to offer the world a high quality coffee with two harvest per year and the intention of searching for a long term relationship.

The process

This coffee is part of the new Program monitored by Cofinet, this process involves fermenting in cherry inside grain pro bags for 48 hours, as temperature in Armenia is quite high grain pro bags are placed in water tanks to reduce the temperature, this allows a more controlled fermentation. Coffee then is pulped and and placed in raised beds 18 days until it reaches ideal moisture content of 11% was achieved

Quality comment
Algrano
Lots of dried fruit and notes of nutella in the cup accompanied by citric touch and tiny hint of green tea/matcha. Medium citric acidity- quite crisp, medium coating body, well balanced, lingering finish.
