The coffee story

Our farm is home to the magical and wonderful Guacharacas, beautiful birds that live in the forests linving as a couple and moving in small flocks; its sonorous and powerful sond accompanies our collectors indicating the beginning and end of the work.
It is a pleasure for us to name this micro-lot Las Guacharacas in honor of such an emblematic bird.

The process

Ripe grains were collected manually by collectors in the region. Once the coffee entered the processing plant, the beans were washed to remove any dirt that it brought, likewise, the green and floating beans were removed. Then it was subjected to the pulping and washing process in our ecological machines that reduce water consumption, there the light grains were removed. Finally, a pre-drying process was carried out to stabilize the coffee beans before being subjected to the silo drying process with temperatures no higher than 38 ° C.

Girls Who Grind Coffee

Hola! We are the Diaz Castillo family and we live in the village of Socorro, Santander. Finca La Esperanza is in our family since 2004, though it exists since the 1950s. We have been working with coffee for our entire lives and have been focusing on quality for a few years with the help of our partners and workers. In order to achieve that we have remodelled our benefício with new machinery to process our coffees, improving the separation of floaters, green and ripe cherries and also allowing us to experiment with new processing methods such as honey. We are committed to improve continuously and keep up to date with the coffee sector by watching webinars, talks, courses and going to events. Our family also values sustainable development and seeks to work in balance with the environment. We turn all byproducts of coffee into something constructive: the pulp is used as fertilizer, the skin is used for cascara infusion and we are also developing a coffee pulp wine!

Quality comment
Algrano
Very dense coffee, sweet, with notes of dark fruit and cooked apple. WIth its syrupy and full body, mild acidity and high sweetness its well suited for intense espresso.
