After carefully hand-picking every single coffee cherry at their ripest point, we process them using clean well water that is more than 500 feet deep in the ground.
Our process includes:
1. Preliminary cleaning to remove impurities
2. Classification by quality using siphons and pulpers
3. Fermentation and wet washing
4. Drying in concrete patios or specialty coffee mechanical dryers that run on average 56 hours per batch (slow process to ensure best quality)
5. Warehousing in hermetic/GrainPro bags and nylon sacks for quality preservation until 10 days prior to exporting
6. When ready for export, hauling and quality classification by size, density, and color sorting takes place
7. Now we place 69Kgs in hermetic/GrainPro bag & yute sack, saw it shut, load the container and escort it to Puerto Cortes, Honduras.
