Castillo Natural Wilmer Cuellar

This lot of Natural Castillo was produced and processed by Wilmer Cuellar in his farm,  Finca Las Brisas, located in Acevedo, at the south of Huila.
 The coffee cherries were picked during the first two weeks of may, fermented for 3 days in grainprobags, and then dried in 2 stages, the first one in the parabolic coffee driers and the second in the mechanical drier, controlling the internal temperature of the cherry, in order to preserve the flavour characteristics and keep the embryo alive. 

 It has  Aroma of Dried fruits and berries. Notes of lychee, lemonade, tropical, hint of pineapple, raspberry with a medium coating citric acidity, a juicy body and clean vibrant aftertaste.
