"This lot comes from one of the higher plots of the farm, from a total of 16 lots. As Nápoles is on the top of the mountains of Palmor, a settlement in the Sierra Nevada mountain range, the cherries take longer to mature and all picking has to be done manually. Our process method is a double fermentation washed. After weighing the cherries brought by the pickers on a given day we put them in a tank with water to remove the green or overripe fruit (floaters). The ripe cherries are left to rest overnight (around 12 hours) at low temperatures and will be depulped in the early hours of the morning. The depulper discharge the beans on a tank, where they ferment for another 30 hours still covered in mucilage. They will be then washed with fresh water from our own spring and taken to patios to sun-dry until moisture content reaches around 11%. ==================================================================

Nápoles was founded by Maurício’s father Cristobal Tovar in the 1960s, a time when the community received a wave of newcomers from all over the country. Cristobal was himself an immigrant. He had left Tolima, in the Mid-West, in search for quieter pastures far from the armed conflict and a milder climate. Like many others, he found in Palmor the perfect setting: fertile soil for farming, a cooler climate and a peaceful life. He also found a wife. In the next 2 decades, the couple would make the Tovar name well-known and respected in Palmor. Not only for their prosperity but also due to their support to the community. The activity of the guerrillas and paramilitary groups grew in Palmor over the course of the years, making hundreds of victims and pushing settlers out. Cristobal was held captive in two occasions and lost his life to the guerrilla’s violence. "
