While I was working for a foreign company I always wanted to be closer to the farmer. They helped me to develop and I understood that the farmers are the real bosses in the business. I knew that If I didn't get close to them and if I didn't have them as my friends I would not understand the business of coffee.
Our philosophy for drying coffee 9 pictures
I am in the business of adding value to coffee. Of improving its flavours and creating a better cup, with more sweetness and acidity. That is why sun-drying at my washing stations doesn't take less than 40 days, which is more than the longest period of many producers. My experiments can take up to 55 or even 60 days to dry! It’s not easy, I tell you... But it's simple logic. Think of goat meat, for example. You can fry it for a short period and it will have a taste. If you put it in the oven for 3 hours it will be very different. If you cook it on ash it will take at least 6 hours and the flavour will be transformed! The longer the better. Up to a point, of course.
