The process behind each crop, ensuring cup quality

Our farm Los Guacharos is located in a magical place of Colombia, the Huila region, a place with a clear example of the biodiversity which Colombia has been blessed. For this reason, our coffee crops are focused into preserve nature because the specialty of our coffee is thanks to it. Because of this approach of preservation, we began to work side by side with Inconexus, developing a personalized work plan that allows improving the technical and social conditions of our farm and community, bringing new infrastructure to preserve water sources, improve the process of selection and separation of varieties obtaining better hand-picking of ripe cherries, a better process of fermentation and controlled drying. As a result of this work, our coffee is aromatically complex and has citrus, caramel, mild green apple, and honey notes, the cup is stable and extended, with vivid and bright acidity, has a round and creamy body, which makes it a very balanced, delicate and specialty coffee.
