This honey micro-lot comes from the highest lot of La Esperanza and it was prepared by me, Paola, and my sisters Leidy and Adriana especially for the Discoveries. We named it as Carmen as a tribute to the Virgin of Carmen, a saint to which both our grandparents are devoted to. My sisters and I put a lot of dedication and care into this coffee, controlling and monitoring the post-harvest until the beans achieved the ideal fermentation and moisture levels. The ripe cherries were manually picked and, after the removal of floaters and green beans, we left them to rest for 15 hours before pulping under controlled temperatures of no more than 35C. We then depulped the cherries on a machine dedicated to our best lots and fermented the beans in mucilage for another 12 hours. We used marquesinas on the top of the farmhouse to dry the coffee, using humidity meters to determine when to stop the process. We love the heavy body and funkiness of this honey and hope you enjoy it too!

About the grower Translate

Hola! We are the Diaz Castillo family and we live in the village of Socorro, Santander. Finca La Esperanza is in our family since 2004, though it exists since the 1950s. We have been working with coffee for our entire lives and have been focusing on quality for a few years with the help of our partners and workers. In order to achieve that we have remodelled our benefício with new machinery to process our coffees, improving the separation of floaters, green and ripe cherries and also allowing us to experiment with new processing methods such as honey. We are committed to improve continuously and keep up to date with the coffee sector by watching webinars, talks, courses and going to events. Our family also values sustainable development and seeks to work in balance with the environment. We turn all byproducts of coffee into something constructive: the pulp is used as fertilizer, the skin is used for cascara infusion and we are also developing a coffee pulp wine!

FAQ


Shipping
Once the ordering period ends we will consolidate all coffees in a shared container. During transport, your coffee is fully insured. We will keep you informed about the shipment status.

Upon arrival of the coffee at the warehouse, you can choose between 2 delivery modes:

  • Doorstep delivery: We will take care of transport to your roastery. We will provide your coffee fully insured until it is ready for unloading from the truck at your roastery.
  • EXW (ex. warehouse) means that we will provide the coffee ready for pick-up at the terminal of the warehouse. You are responsible for organising transport and insurance from the warehouse to your roastery.

Currently, we can deliver coffee anywhere in Europe, except Hungary. For all European buyers, the coffee will be provided custom cleared in any case. Roasters in Switzerland choosing EXW will be responsible for customs clearance.
