For the past few years, we have been working really hard to develop our fermentation and drying techniques to the point where we can firmly say that we have achieved almost perfection. The process

Our process begins by making sure that we pick the right cherries. That is the key to getting a great result. Once we have collected and selected the right cherries we Wash in the traditional way with 48 hours of natural fermentation before depulping.
